Since we lost Venice, I wasn't of a mind to add another city... I figured we'd do better with more time in less places. No need to spread ourselves too thinly...

I agree. Instead of adding another destination let's just give ourselves more time in places where we'll need it.
This schedule looks good. I like having the extra day in Madrid. I hear its really awesome. And also the extra day in Rome since we'll day trip it to Pompei.
